Pup-date on Uma (and a question about calories)

Uma was adopted 12/15/18 and was 20 pounds less than the shelter told me she was. We figured out about a month later (after 30 days of diarrhea) that it was EPI, and she was down to 47 pounds. Now, we had a vet visit about a month again, and she is back to her target weight!!!
I use enzyme Diane 6x and feed Victor’s beef. It is amazing and her poops are the healthiest I’ve ever seen! She loves playing fetch and finding her hidden toys. She is like a brand new dog, and people that knew her at the beginning keep telling me they can’t believe how good she looks. She’s also on B12 dermal 1mL per month. But otherwise I dont need to do anything special!
Question- now that she’s running more, I want to make sure I’m feeding her enough. I was feeding her about twice as much as she needed until she got up to weight, and now she’s down to something more reasonable. I have to feed her before bed because she has empty stomach syndrome, so she gets fed three times a day. I want to make the meals somewhat substantial so she feels full. Anyone know any good resources for how to calculate how many calories she burns, especially now that we’re running around in the summer heat? She’s 60+ pounds now and, per the shelter, 10 years old.
